Ingredients:
- 2 cups chopped onions
- 2 tsp olive oil (or vegetable oil)
- ⅓ cup peanut butter
- 6 cups sweet potatoes, peeled and cut into 1” cubes
- 1 tbsp ground cumin
- ¼ tsp salt
- ½ tsp pepper
- ¼ tsp cayenne pepper
- 2 (15.5 oz.) cans garbanzo beans, undrained
- 2 (14.5 oz.) cans low-sodium vegetable broth
- 1 (28 oz.) can diced or crushed tomatoes, undrained
Preparation:
- Heat olive oil over medium-high heat in a large-size saucepan and sauté onions until lightly browned.
- Stir in the butter, potatoes, cumin, salt, pepper, cayenne pepper, beans, broth, and tomatoes then raise heat to bring to a boil.
- Reduce heat, cover and simmer until sweet potatoes are softened (about 45 minutes).
