Three Cabbage Slaw

(makes 4 servings)

  • ½ cup red cabbage, thinly sliced


  • 1½ cups green cabbage, thinly sliced


  • 2 cups Napa cabbage, thinly sliced


  • 1 tbsp fresh chives, chopped


  • 2 tbsp rice wine vinegar


  • 3 tbsp orange marmalade


  • 1 tsp grated fresh ginger root


Preparation:

  • Mix cabbage with chives in a large-sized bowl.


  • Combine vinegar, marmalade and ginger in a small bowl then pour over cabbage.


  • Toss and serve.
