Ingredients:
- 1 large acorn squash, cut into ½” rings, seeds removed
- ½ cup orange juice
- 3 tbsp brown sugar
- ⅛ tsp nutmeg
- ¼ tsp cinnamon
- Non-stick cooking spray
- Fruit Filling: blueberry sauce (see recipe below)
Preparation:
- To make blueberry sauce: Heat one cup frozen blueberries with 2 tsp sugar in a covered microwave bowl for about 2 minutes. Stir.
- Preheat oven to 350 degrees F.
- Spray a 13" * 9" baking dish with non-stick cooking spray.
- Arrange squash rounds in baking dish.
- Combine orange juice, brown sugar, nutmeg and cinnamon. Drizzle over squash.
- Bake at 350 degrees F for about 45 minutes.
- Spoon blueberry sauce into center of squash rounds.
