Crustless Quiche

Weight Loss Recipes : Crustless QuicheIngredients:

  • 3 cups chopped broccoli

  • 1/2 cup chopped onion

  • 113 g shredded swiss cheese

  • 4 slices cooked bacon (cut into small pieces)

  • 3 egg whites

  • 3 Tbsp butter

  • 1/2 cup heavy cream with enough water to equal 2/3 cup liquid

  • 3/4 tsp salt

  • 1½ Tbsp soy flour

  • pepper and nutmeg to taste

Preparation:

  • Prepared 9" pie plate sprayed with non-stick spray 375 degrees, 25 minutes.

  • Set aside cooked broccoli.

  • Saute onions gently in butter, until tender, add soy flour and cook a couple more minutes.

  • Whisk together egg whites, cream and water. Mix in salt and spices.

  • Combine egg white mix, prepared vegetables and cheese.

  • Pour into prepared pie plate.

  • Bake in oven until puffed and browned.
