Crustless Quiche
Ingredients:- 3 cups chopped broccoli
- 1/2 cup chopped onion
- 113 g shredded swiss cheese
- 4 slices cooked bacon (cut into small pieces)
- 3 egg whites
- 3 Tbsp butter
- 1/2 cup heavy cream with enough water to equal 2/3 cup liquid
- 3/4 tsp salt
- 1½ Tbsp soy flour
- pepper and nutmeg to taste
Preparation:- Prepared 9" pie plate sprayed with non-stick spray 375 degrees, 25 minutes.
- Set aside cooked broccoli.
- Saute onions gently in butter, until tender, add soy flour and cook a couple more minutes.
- Whisk together egg whites, cream and water. Mix in salt and spices.
- Combine egg white mix, prepared vegetables and cheese.
- Pour into prepared pie plate.
- Bake in oven until puffed and browned.
